Making mayonnaise

This was our first effort in making mayonnaise. I was rather pleased with the results. Three egg yolks went into making it. I still have the egg whites to use up. We used the mayonnaise to make coleslaw and for a couple of days I used it as a substitute for margarine on bread. We'll do a video of how to make it soon. Meanwhile the hens are continuing to lay lots of eggs, even though we are in the middle of winter.

meringue is a great use of egg whites (in case you are not athletes who use to drink raw eggwhites every morning :)). you can also make pavlova. i'd love to buy eggs from you if i'd live in UK, but now it's too far :).

We were thinking of making meringues but have decided to add them to a savory nut loaf. The egg whites will help bind the ingredients together. I'm making it tomorrow and will be filming it.
