This is the first of the hard cheeses we made. We are still on the learning curve when it comes to making cheese but this one worked rather well. Good flavour and texture. A bit of mold on the outside but the cheese formed a rind so there was no mold on the inside. Nevertheless, we are looking to wrap future cheeses in cheese cloth whilst maturing them. Maturing times have been shorter than we expected. This one was left standing for about a month.
