Using up buttermilk
To our glut of quail eggs, soft goat cheese (made last week) and hard goat cheese (made last year), we can add another glut produce: buttermilk. Having made the butter, the resulting buttermilk was added to some of our soft goat cheese, hen eggs, grated hard goat cheese and chopped onions to make a filling for some flans. I even put buttermilk into the pastry instead of water. A handful of boiled quail eggs went into each flan as well. We had one for dinner tonight. Very nice.
