Making sauerkraut
We have used some of this huge cabbage to make sauerkraut. This is the first time we have made it and it is currently fermenting in a couple of kilner jars. We will let you know how it turns out.

We make 3 gallons of sauerkraut every year for the last 30 years, and I would not have let my cabbage ferment without it having some kind of escape hatch, the same as for wine making. I am curious to see how this turns out, for sure.
