How to make elderberry jelly
Lots of elderberries and another bucket of them picked yesterday. So, making elderberry jelly (using some of our windfal apples as the pectin source) was a logical way to use them up. We will also be making wine and cordial from the berries as well.
I made this a few days ago but unfortunately it did not thicken much. Taste is fine but it's more of a sauce now. Can this be because the elderberries were frozen?
We have an abundance of rose hips in the neigbourhood. Any recipe ideas?

what is cordial and how do you make it?
a drink made from fruit, watered down with sugar or honey to further sweeten it.
